Originating in Korea, black garlic is, simply put, the product of curing fresh garlic bulbs over the course of controlled time and temperature. Through the process, moisture is lost and the sugar in the garlic becomes caramelized giving the garlic its black appearance, with all the benefits of fresh garlic without the lingering bite.
